STORIES OF SUCCESS AND MEXICAN TRADITION
Taste of Heritage: Copala Guerrero Traditional Bakery
The story of Pan Estilo Copala Guerrero is a testament to hard work, perseverance, and pride in one's roots. Nolberta Bonilla and Aniceto "Cheto" Polanco, originally from Copala, Guerrero, came to California in search of better opportunities while preserving the traditions of their homeland.
In 2016, Nolberta began baking bread in her garage while working as a nursing assistant. Later, together with Cheto and their children, Sergio and Ilse, she transformed that dream into a successful family-owned bakery in Compton. Thanks to their handcrafted recipes and authentic flavors, specialties such as borrachitos, gusanitos, peinetas, and cuernitos have become favorites within the Latino community. Today, their bakery stands as a symbol of family unity, cultural pride, and the entrepreneurial spirit that defines so many Latino immigrants.
